1 kg pork (cut into medium-sized pieces)
1 medium-sized onion (chopped)
3 cloves of garlic (minced)
1 inch ginger (minced)
1 tomato (chopped)

1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
Salt to taste
2 tbsp mustard oil
1 cup water

Instructions:
In a large pan, heat mustard oil over medium heat.
Add the chopped onion and fry until golden brown.
Add minced garlic and ginger and fry for another minute.
Add chopped tomatoes, green chilies, turmeric powder, cumin powder, coriander powder, and salt to taste. Cook until the tomatoes have softened.
Add the pork pieces and cook for 10 minutes, stirring occasionally.
Pour in 1 cup of water and let the curry simmer for 30 minutes or until the pork is cooked through and tender.
